I'm still playing catch-up, but I wanted to get around to reading this.
I love the family dynamics you show here. This is just how I imagine Snape as a parent: stern and strict, but affectionate in his own way. Of course he loves his children, but you just can't expect him to come out and say it. It shows in all the little things.
I especially like this: "Then a man should be careful about how he gives his word, shouldn't he?" he said quietly. That's just Snape all over.
On a purely shallow note, thank you for not making Snape toweringly tall. It irks me when I see that in fan fiction, because he's canonically shorter than several characters. Plus, he seems to have a Napoleon Complex...
